My Mother[who has no patience for baking]'s [extremely easy/fast/low-cleanup] Lemon Bars Preheat oven to 350°. In a 9"x9" pan, mix together: 1/2 c melted butter 1 c flour 1/4 c powdered sugar
Pat down and bake for 15 min.
Meanwhile, mix in a bowl: 2 beaten eggs 1 c sugar 1/2 c lemon juice (but like, whatever, probably use a full cup of it) 2 tablespoon flour 1/2 teaspoon baking powder
Pour over top, bake for 25 minutes. ----------
Also, this lemon curd recipe (http://www.finecooking.com/recipes/lemon_curd.aspx), with an extra yolk and 1.5x lemon juice, was A+ delicious and felt really foolproof.
